This coffee grows in the regions of Piendamó, Morales, and Cajibío, where elevation, steady climate, and careful farming practices combine to produce a clean and expressive cup. Grown between 1,650 and 1,800 meters above sea level, the coffee develops slowly, resulting in good density, bright citrus acidity, gentle sweetness, and a juicy, balanced body. The washed process, combined with 18 - 24 hours of aerobic fermentation, helps preserve clarity while allowing the character of the land to show through.
What makes this coffee really special is the people who make it. ACC Por La Paz unites smallholder farmers in the heart of Cauca who have chosen coffee as a way to remain on their land and build a dignified future, despite the strong economic pressure rural families often face from illicit crops in this region. Through collective organization, shared learning, and ongoing technical support, the farmers strengthen coffee as a legal and viable livelihood. They improve quality while building resilient local communities. This coffee isn't about trends or shortcuts. It reflects steady work, trust, and a long-term commitment to cultivating something meaningful, one harvest at a time.
