Aquiares Estate is Costa Rica’s largest coffee farm, located on the volcanic slopes of Turrialba and managed as a fully integrated coffee community. Established in 1890 and revitalized in the 1980s under Alfonso Robelo, Aquiares has become a reference point for large-scale specialty production, combining consistent volume with high agronomic and cup quality standards. The farm is currently managed by Diego Robelo, with a strong focus on variety selection, processing precision, and long-term sustainability.

Aquiares operates under a carbon-neutral framework, measuring and offsetting greenhouse gas emissions in alignment with IPCC-verified methodologies and Costa Rica’s Nationally Appropriate Mitigation Action. The estate maintains extensive biological corridors and agroforestry systems, supporting biodiversity while improving soil health and farm resilience. Ongoing research partnerships further inform best practices in cultivation and environmental management.

This Grand Peaberry lot consists of naturally occurring single-seed cherries, sorted for size to achieve a larger-than-typical Peaberry screen. The coffee was mechanically washed and dried on raised beds in a solar dryer over 18–24 days, allowing for controlled moisture reduction and increased uniformity. The result is a clean, structured cup that highlights Aquiares’ processing consistency and technical approach to quality.

In the cup, this coffee bursts with character: silky caramel, rich chocolate, bright citrus, and vivid touches of spiced pear, macadamia, and orange. It’s clean, lively, and deeply satisfying, with a smooth, rounded body that shines in both everyday pour-overs and precision brews.
