Santos is a motivated young producer, whose coffee is for the first time being milled to be showcased on its own in the US. He has made significant investments into his farm that have yielded excellent results.
This year, he built a structure with enclosed raised beds for slower, more even drying, and he started hand-sorting the cherries before de-pulping to ensure homogenous fermentation. He also purchased a screen that helps to remove pulp and over-ripe coffee that would have otherwise gone into the fermentation tank. He monitors the coffee throughout the fermentation process to wash it at the right time- he can tell by touch when the coffee is ready. He washes his coffee, and it flows through small channels on his patio before moving the parchment to dry in the new beds.
